FINAL OF THE “FOOD AND NUTRITION” CONTEST

From August 7-9, 2024, the Department of Nutrition and Food Science, Institute of Biotechnology and Food, in collaboration with the Department of Food and Nutrition, Wonkwang Health Science University, Korea, organized the final round of the contest “Creative Ideas for Food and Nutrition”. The contest created a creative playground and directly contributed to improving knowledge and practical skills in food and nutrition for students studying at Ho Chi Minh City University of Industry. At the same time, another important purpose of the competition is to guide and propagate students to change their awareness and behavior, thereby gradually changing bad habits related to nutrition and food. contributing to protecting, improving and enhancing their health as well as spreading in the academic world and further in the community.

At the competition, students from Wonkwang University of Health Sciences, Korea shared the results of the implementation of the “Global Capstone Project 2024” with 5 biscuit products supplemented with insect powder to take advantage of the valuable nutrients found in some edible insects. This is a new direction of the food industry, meeting the requirements of providing new environmentally friendly foods with high nutritional value. Five biscuit products supplemented with insects were taste tested and sensory evaluated with a large number of testers at the campus of the IUH Youth Cultural House.

On the side of Ho Chi Minh City University of Industry. Ho Chi Minh City, the competition had the wide participation of students from 3 faculties and institutes training in related majors including the Faculty of Business Administration, the Faculty of Tourism Commerce and the Institute of Biotechnology and Food. In addition to explaining the ideas in writing sent online to the organizing committee (dateline July 31), on August 7, 2024, representatives of the ideas presented directly to the Vietnam-Korea Inter-University Jury. Ideas and products that tend to utilize agricultural waste, are preservative-free, and are good for consumers’ health are highly appreciated. The winning ideas and products include: “Plum cake with added sweet potato”, “Sourdough sandwich with added wheat germ”, “Vegetarian ham with added wheat germ”, “Non-dairy ice cream using aloe vera gel and mung bean”.

On this occasion, Vietnamese-Korean students participating in the “Global Capstone Project 2024” project together with exchange students from the Department of Food Science, National Pingtung University of Science and Technology, who are studying at the Department of Nutrition and Food Science, Institute of Biotechnology and Food Technology under the school. The students also had the opportunity to visit the International Exhibition “Vietfood & Propack Vietnam 2024” at the Saigon Exhibition and Convention Center (SECC).
